The Captain's Famous Jambalaya is a delicious and spicy dish that combines Cajun flavors with a mix of meat, seafood, and vegetables. This recipe has been a favorite in the Captain's family for generations, and now you can enjoy it too!
Ingredients
- 1 lb. Andouille sausage, sliced
- 1 lb. chicken breast, diced
- 1 lb. shrimp, peeled and deveined
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 stalks of celery, chopped
- 3 cloves of garlic, minced
- 1 can diced tomatoes
- 3 cups chicken broth
- 2 cups long grain rice
- 2 tbsp Cajun seasoning
- 1 tsp thyme
- 1 tsp oregano
- Salt and pepper to taste
- Green onions, chopped for garnish
Directions
- In a large pot or Dutch oven, brown the sausage over medium heat until cooked through. Remove and set aside.
- Add the diced chicken to the pot and cook until browned. Remove and set aside with the sausage.
- In the same pot, sauté the onion, bell pepper, celery, and garlic until softened.
- Stir in the Cajun seasoning, thyme, and oregano.
- Add the diced tomatoes, chicken broth, and rice to the pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
- Return the sausage and chicken to the pot, and add the shrimp. Cook for another 10-15 minutes until the shrimp is pink and cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
