This Instant Pot Broccoli Cheese Soup is the perfect comfort food for a cozy night at home. Made with fresh broccoli, creamy cheese, and a touch of spices, this soup is both delicious and nutritious. Ingredients

  • 4 cups broccoli florets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika

Directions

  1. Turn on the Instant Pot and select the Saute function. Add the butter and let it melt.
  2. Add the chopped onion and minced garlic to the Instant Pot and saute for 2-3 minutes until they are softened.
  3. Press Cancel to stop the Saute function. Add the broccoli florets, vegetable broth, salt, black pepper, dried thyme, and paprika to the Instant Pot. Stir well to combine.
  4. Close the Instant Pot lid and make sure the venting knob is set to Sealing. Select the Soup function and set the cooking time for 5 minutes on high pressure.
  5. Once the cooking time is up, allow the Instant Pot to naturally release the pressure for 5 minutes. Then, carefully turn the venting knob to Venting to release the remaining pressure.
  6. Open the Instant Pot lid and stir in the shredded cheddar cheese until it has melted. Add the milk and stir well to combine.
  7. In a small bowl, mix the all-purpose flour with a few tablespoons of water to create a slurry. Add the slurry to the Instant Pot and stir well to thicken the soup.
  8. Select the Saute function again and cook for an additional 2-3 minutes, stirring occasionally, until the soup has thickened to your desired consistency.
  9. Serve the Instant Pot Broccoli Cheese Soup hot with a sprinkle of shredded cheddar cheese on top, if desired.
