Ingredients
- 4 cups broccoli florets
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon paprika
Directions
- Turn on the Instant Pot and select the Saute function. Add the butter and let it melt.
- Add the chopped onion and minced garlic to the Instant Pot and saute for 2-3 minutes until they are softened.
- Press Cancel to stop the Saute function. Add the broccoli florets, vegetable broth, salt, black pepper, dried thyme, and paprika to the Instant Pot. Stir well to combine.
- Close the Instant Pot lid and make sure the venting knob is set to Sealing. Select the Soup function and set the cooking time for 5 minutes on high pressure.
- Once the cooking time is up, allow the Instant Pot to naturally release the pressure for 5 minutes. Then, carefully turn the venting knob to Venting to release the remaining pressure.
- Open the Instant Pot lid and stir in the shredded cheddar cheese until it has melted. Add the milk and stir well to combine.
- In a small bowl, mix the all-purpose flour with a few tablespoons of water to create a slurry. Add the slurry to the Instant Pot and stir well to thicken the soup.
- Select the Saute function again and cook for an additional 2-3 minutes, stirring occasionally, until the soup has thickened to your desired consistency.
