Ingredients
- 1 pound of sausage
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves of garlic, minced
- 1 can of creamed corn
- 1 can of corn, drained
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of self-rising cornmeal
- 1/2 cup of all-purpose flour
- 1 tablespoon of sugar
- 1 cup of buttermilk
- 1/4 cup of melted butter
Directions
- Preheat oven to 350°F.
- In a large skillet, cook sausage, onion, bell pepper, and garlic over medium heat until sausage is cooked through. Drain off any excess fat.
- Stir in creamed corn, corn, salt, and pepper. Pour mixture into a greased 9x13-inch baking dish.
- In a medium bowl, combine cornmeal, flour, sugar, buttermilk, and melted butter. Mix until just combined.
- Spread cornbread mixture over sausage mixture in the baking dish.
- Bake for 40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
