Ingredients

  • 1 pound of sausage
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves of garlic, minced
  • 1 can of creamed corn
  • 1 can of corn, drained
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 cup of self-rising cornmeal
  • 1/2 cup of all-purpose flour
  • 1 tablespoon of sugar
  • 1 cup of buttermilk
  • 1/4 cup of melted butter

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet, cook sausage, onion, bell pepper, and garlic over medium heat until sausage is cooked through. Drain off any excess fat.
  3. Stir in creamed corn, corn, salt, and pepper. Pour mixture into a greased 9x13-inch baking dish.
  4. In a medium bowl, combine cornmeal, flour, sugar, buttermilk, and melted butter. Mix until just combined.
  5. Spread cornbread mixture over sausage mixture in the baking dish.
  6. Bake for 40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
