Ingredients

  • 4 cups pitted sour cherries
  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons lemon juice

Directions

  1. In a saucepan, combine water and sugar. Heat over medium heat until sugar is dissolved, stirring occasionally.
  2. Add pitted sour cherries to the sugar syrup and cook for 5 minutes, stirring occasionally.
  3. Remove from heat and let cool to room temperature.
  4. Transfer the cherry mixture to a blender and blend until smooth.
  5. Strain the mixture through a fine mesh sieve to remove any solids.
  6. Stir in lemon juice and pour the mixture into a shallow pan.
  7. Cover and freeze for 1-2 hours, until partially frozen.
  8. Remove from freezer and scrape the mixture with a fork to break up ice crystals.
  9. Return to freezer and repeat scraping every 30 minutes, until sorbet is smooth and frozen.
  10. Serve in chilled bowls and enjoy!
