Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice, uncooked
  • 4 cups chicken broth
  • 4 cups water
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Directions

  1. In a large pot, combine the chicken broth and water. Bring to a boil.
  2. Add the chicken breasts to the pot and simmer for 20 minutes or until cooked through. Remove the chicken from the pot and set aside to cool.
  3. Add the wild rice, onion, carrots, celery, garlic, dried thyme, dried rosemary, and bay leaf to the pot. Simmer for 30 minutes or until the rice is tender.
