Ingredients

  • 1 lb calamari, cut into rings
  • 1/2 cup shredded coconut
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro

Directions

  1. In a large bowl, combine calamari, coconut, olive oil, lemon juice, parsley, salt, pepper, garlic powder, and cayenne pepper.
  2. Mix well to combine.
  3. Cover the bowl and let marinate in the refrigerator for at least 1 hour.
  4. Remove from the refrigerator and add the chopped cilantro.
  5. Mix well to combine.
  6. Serve chilled.
