Ingredients
- 2 tablespoons olive oil
- 3 pounds oxtail, cut into 2-inch pieces
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon ground allspice
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- 1 tablespoon dark brown sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 (14-ounce) can diced tomatoes
- 2 cups beef broth
- 2 cups water
- 2 tablespoons Worcestershire sauce
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 2 tablespoons freshly squeezed lime juice
Directions
- Heat the olive oil in a large Dutch oven over medium-high heat. Add the oxtail pieces and brown for about 5 minutes, stirring occasionally.
- Add the onions and garlic and cook for an additional 5 minutes, stirring occasionally.
- Add the thyme, allspice, nutmeg, cinnamon, paprika, brown sugar, salt, and pepper and stir to combine.
- Add the diced tomatoes, beef broth, water, and Worcestershire sauce and bring to a boil.
- Reduce the heat to low and simmer, covered, for 1 hour.
- Uncover and continue to simmer for an additional 30 minutes, stirring occasionally.
- Stir in the parsley, cilantro, and lime juice and season with additional salt and pepper, if desired.
- Serve hot over cooked white rice.
