Ingredients

  • 2 tablespoons olive oil
  • 3 pounds oxtail, cut into 2-inch pieces
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground allspice
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 tablespoon dark brown sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 (14-ounce) can diced tomatoes
  • 2 cups beef broth
  • 2 cups water
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons freshly squeezed lime juice

Directions

  1. Heat the olive oil in a large Dutch oven over medium-high heat. Add the oxtail pieces and brown for about 5 minutes, stirring occasionally.
  2. Add the onions and garlic and cook for an additional 5 minutes, stirring occasionally.
  3. Add the thyme, allspice, nutmeg, cinnamon, paprika, brown sugar, salt, and pepper and stir to combine.
  4. Add the diced tomatoes, beef broth, water, and Worcestershire sauce and bring to a boil.
  5. Reduce the heat to low and simmer, covered, for 1 hour.
  6. Uncover and continue to simmer for an additional 30 minutes, stirring occasionally.
  7. Stir in the parsley, cilantro, and lime juice and season with additional salt and pepper, if desired.
  8. Serve hot over cooked white rice.
