  • 1/2 teaspoon salt
  • 2 tablespoons unsweetened cocoa powder
  • 3/4 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 tablespoon red food coloring
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon baking powder
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, salt, and cocoa powder.
  3. In a separate large bowl, beat together the vegetable oil, sugar, eggs, and vanilla until well combined.
  4. Slowly incorporate the dry ingredients into the wet mixture, alternating with buttermilk in three separate additions, beginning and ending with the dry ingredients.
  5. In a small bowl, mix the red food coloring, vinegar, and baking powder until it foams. Quickly fold this mixture into the batter.
  6. Line a muffin tin with cupcake liners and fill each liner about two-thirds full with the batter.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the cupcakes from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  9. In a mixing bowl, beat the cream cheese and butter until fluffy.
  10. Add the powdered sugar and vanilla extract, and continue beating until the frosting is smooth and creamy.
  11. Once the cupcakes have cooled, frost them generously with cream cheese frosting.
  12. Serve and enjoy these delicious classic red velvet cupcakes!
