Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 2 potatoes, peeled and boiled
  • 1 cup cottage cheese
  • 1/4 cup grated cheddar cheese
  • 1/4 cup finely chopped onion
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Sour cream and chopped crispy bacon, for serving

Directions

  1. In a large mixing bowl, combine the flour and salt. Gradually add the warm water, mixing until a dough forms. Knead the dough for a few minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  2. In a separate bowl, mash the boiled potatoes. Add the cottage cheese, cheddar cheese, and finely chopped onion. Mix well to combine. Season with salt and pepper to taste.
  3. Divide the dough into two equal parts. On a floured surface, roll out one part of the dough into a thin circle. Using a round cookie cutter or a glass, cut out circles of dough.
  4. Place a spoonful of the potato-cheese filling in the center of each dough circle. Fold the dough in half to form a half-moon shape. Press the edges together to seal the pierogi, making sure no filling escapes.
  5. Bring a large pot of salted water to a boil. Gently drop the pierogi into the boiling water and cook for about 5 minutes, or until they float to the surface. Remove them from the water using a slotted spoon and set aside.
  6. In a skillet, melt the butter over medium heat. Add the cooked pierogi and fry them for a few minutes on each side until golden brown.
