Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes

  • 1 pound potatoes, peeled and cut into chunks

Directions

  1. Set the Instant Pot to sauté mode and heat the vegetable oil. Add the beef stew meat and brown it on all sides. Remove the meat from the pot and set it aside.
  2. Add the chopped onion to the Instant Pot and sauté until it becomes translucent. Add the minced garlic and cook for an additional minute.
  3. Stir in the tomato paste and cook for 1-2 minutes to enhance the flavor.
  4. Add the beef broth and Guinness (if using) to the pot, scraping the bottom to deglaze and release any browned bits.
  5. Return the browned beef to the Instant Pot. Add the carrots, celery, potatoes, bay leaves, dried thyme, and dried rosemary. Season with salt and black pepper to taste.
  6. Close the Instant Pot lid and set it to high pressure for 35 minutes. Allow for a natural pressure release for 10 minutes before manually releasing the remaining pressure.
