Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Directions

  1. In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Cover the dough with plastic wrap and refrigerate for at least 1 hour or overnight.
  6. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  7. Roll the chilled dough into 1-inch balls.
  8. Roll each ball in granulated sugar until coated.
  9. Place the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 8-10 minutes, or until the edges are slightly golden.
  11. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.
