Ingredients

  • 1 can of chili with beans
  • 1 can of no-bean chili
  • 1 cup of shredded cheddar cheese
  • 1 cup of shredded pepper jack cheese
  • 1/2 cup of sour cream
  • 1/4 cup of diced jalapenos
  • 1/4 cup of diced red onions
  • 1/4 cup of diced tomatoes
  • 2 tablespoons of chopped fresh cilantro
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, combine the chili with beans and no-bean chili. Heat over medium heat until warmed through.
  3. In a 9-inch oven-safe skillet or baking dish, layer half of the chili mixture.
  4. Sprinkle half of the cheddar cheese and half of the pepper jack cheese over the chili.
  5. Repeat the layers with the remaining chili and cheeses.
  6. Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool slightly.
  8. In a small bowl, combine the sour cream, diced jalapenos, diced red onions, diced tomatoes, chopped cilantro, chili powder, cumin, garlic powder, salt, and pepper.
  9. Mix well to combine.
  10. Once the dip has cooled slightly, spoon the sour cream mixture over the top.
  11. Garnish with additional chopped cilantro, if desired.
  12. Serve hot with tortilla chips, bread, or assorted veggies.
