Ingredients

  • 2 pounds chicken, cut into pieces
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup rice
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened.
  4. Add the chicken back to the pot. Pour in the chicken broth and add the bay leaf and dried thyme.
  5. Season with salt and pepper.
  6. Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes, or until the chicken is cooked through.
  7. Remove the chicken from the pot and shred it. Discard the bones and return the shredded chicken to the pot.
  8. Add the rice and continue to simmer for another 15-20 minutes, or until the rice is tender.
  9. Taste and adjust the seasoning if needed.
  10. Serve the chicken soup with rice hot, garnished with fresh parsley.
