Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 cups sliced strawberries
  • 1/4 cup sugar for strawberries
  • Whipped cream or vanilla ice cream for serving

Directions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the flour mixture and use a pastry cutter or your hands to mix until crumbly.
  4. Stir in the heavy cream and vanilla extract until the dough comes together.
  5. Turn the dough out onto a floured surface and gently knead a few times until smooth.
  6. Roll out the dough to about 1/2 inch thickness and cut out round biscuits with a cookie cutter.
  7. Place the biscuits on the prepared baking sheet and bake for 15-18 minutes until golden brown.
  8. While the biscuits are baking, toss the sliced strawberries with sugar and let macerate for 15 minutes.
  9. To assemble, split the biscuits in half, spoon some strawberries on the bottom half, add a dollop of whipped cream or a scoop of ice cream, then top with the other half of the biscuit.
  10. Serve immediately and enjoy!
