Ingredients
- 2 pounds beef tripe, cleaned and diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 can (29 oz) hominy, drained and rinsed
- 2 cans (14.5 oz) diced tomatoes
- 2 dried guajillo chilies, soaked and pureed
- 1 tbsp oregano
- 1 tbsp cumin
- Salt and pepper to taste
- Lime wedges, chopped cilantro, and diced onions for garnish
Directions
- In a large pot, bring water to a boil and add the beef tripe. Boil for 10 minutes, then drain and rinse the tripe.
- In the same pot, sauté the onions and garlic until fragrant. Add the tripe back to the pot.
- Stir in the hominy, diced tomatoes, guajillo chilies, oregano, and cumin. Season with salt and pepper.
- Cover and simmer for 1.5 hours, or until the tripe is tender.
- Serve hot with lime wedges, chopped cilantro, and diced onions on the side for garnish.
