Ingredients

  • For the cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the filling:
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the ganache:
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, chopped
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in the boiling water. The batter will be thin, but that's okay.
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. For the filling, beat the heavy cream, powdered sugar, and vanilla extract in a mixing bowl until stiff peaks form.
  9. Once the cakes have cooled, place one cake layer on a serving plate. Spread the filling evenly over the top.
  10. Place the second cake layer on top of the filling.
  11. For the ganache, heat the heavy cream in a saucepan until it just begins to boil.
  12. Remove from heat and add the chopped chocolate. Stir until smooth and well combined.
  13. Stir in the vanilla extract.
  14. Pour the ganache over the top of the cake, allowing it to drip down the sides.
  15. Refrigerate the cake for at least 2 hours or until the ganache is set.
  16. Slice and serve Aunt Rosie's Gob Cake, and enjoy!
