These sous vide poached pears are a perfect fall dessert. The pears are cooked to perfection with a hint of cinnamon and vanilla, and served with a drizzle of caramel sauce. This recipe is simple but elegant, and will impress your family and friends at any dinner party.

Ingredients

  • 4 ripe pears
  • 2 cups water
  • 1 cup granulated sugar
  • 1 cinnamon stick
  • 1 vanilla bean, split and scraped
  • 1/4 cup caramel sauce, for serving

Directions

  1. Step 1: Preheat the sous vide machine to 175°F (80°C).
  2. Step 2: Peel the pears, leaving the stems intact. Cut a thin slice off the bottoms of the pears so that they stand upright.
  3. Step 3: In a large bowl, combine water, sugar, cinnamon stick, and vanilla bean seeds. Stir until the sugar is dissolved.
  4. Step 4: Place the pears in a sous vide bag or a resealable plastic bag. Pour the sugar mixture over the pears, making sure they are fully submerged. Seal the bag using a vacuum sealer or by using the water displacement method.
  5. Step 5: Place the bag in the sous vide water bath and cook for 2 hours.
  6. Step 6: Once the pears are cooked, carefully remove them from the bag and transfer to a serving plate.
  7. Step 7: Serve the pears warm or at room temperature, drizzled with caramel sauce. Enjoy!
