Ingredients
- 4 ripe pears
- 2 cups water
- 1 cup granulated sugar
- 1 cinnamon stick
- 1 vanilla bean, split and scraped
- 1/4 cup caramel sauce, for serving
Directions
- Step 1: Preheat the sous vide machine to 175°F (80°C).
- Step 2: Peel the pears, leaving the stems intact. Cut a thin slice off the bottoms of the pears so that they stand upright.
- Step 3: In a large bowl, combine water, sugar, cinnamon stick, and vanilla bean seeds. Stir until the sugar is dissolved.
- Step 4: Place the pears in a sous vide bag or a resealable plastic bag. Pour the sugar mixture over the pears, making sure they are fully submerged. Seal the bag using a vacuum sealer or by using the water displacement method.
- Step 5: Place the bag in the sous vide water bath and cook for 2 hours.
- Step 6: Once the pears are cooked, carefully remove them from the bag and transfer to a serving plate.
