Ingredients

  • 1 cup pitted dates
  • 1 cup boiling water
  • 1 teaspoon instant coffee powder
  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup semisweet chocolate chips
  • Powdered sugar for dusting (optional)
  • Fresh berries for garnish (optional)

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a small bowl, combine the dates, boiling water, and instant coffee powder. Let it sit for 5 minutes to soften the dates.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture and buttermilk to the butter mixture, alternating between the two. Begin and end with the flour mixture, mixing well after each addition.
  6. Fold in the date mixture and chocolate chips until well combined.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Once cooled, you can dust the cake with powdered sugar and garnish with fresh berries, if desired.
  11. Slice and serve the chocolate date cake, and enjoy the rich and chocolatey goodness!
