Ingredients

  • 1 15-ounce can of chickpeas, rinsed and drained
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1/4 cup diced red bell pepper
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon sea salt
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup crumbled feta cheese
  • 4 slices of your favorite bread

Directions

  1. In a medium bowl, mash the chickpeas with a fork or potato masher until they are mostly broken up.
  2. Add the red onion, celery, bell pepper, parsley, garlic powder, cumin, and salt to the bowl and mix to combine.
  3. In a small bowl, whisk together the olive oil and lemon juice and pour over the chickpea mixture. Mix to combine.
  4. Fold in the feta cheese.
  5. Spread the chickpea salad onto two slices of bread and top with the remaining two slices.
  6. Cut the sandwiches in half and serve.
