Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

- 3 cups potatoes, cut into 1-inch cubes
- 1 cup chicken broth
- 1/4 cup fresh parsley, chopped
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chopped onion and sauté until softened, about 5 minutes.
- Add the chicken cubes and cook for about 3 minutes, stirring occasionally.
- Add the garlic, paprika, oregano, cumin, and salt and pepper. Sauté for another minute.
- Add the potatoes and chicken broth, stirring to combine.
