Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 3 cups potatoes, cut into 1-inch cubes
  • 1 cup chicken broth
  • 1/4 cup fresh parsley, chopped

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chopped onion and sauté until softened, about 5 minutes.
  3. Add the chicken cubes and cook for about 3 minutes, stirring occasionally.
  4. Add the garlic, paprika, oregano, cumin, and salt and pepper. Sauté for another minute.
  5. Add the potatoes and chicken broth, stirring to combine.
  6. Bring to a boil, reduce heat and simmer for 15 minutes, stirring occasionally, until the potatoes are tender.
  7. Stir in the parsley and serve.
