Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 1/2 cup white wine
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 1 pound smoked pork sausage, cut into 1-inch slices
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the oil in a large Dutch oven or pot over medium-high heat. Add the onion, garlic, carrots, celery, thyme, and sage. Cook, stirring often, until the vegetables are softened, about 5 minutes.
  2. Stir in the tomato paste and cook for 1 minute.
  3. Add the chicken broth, white wine, and beans. Bring to a simmer and cook for 5 minutes.
  4. Add the sausage, salt, and pepper. Simmer for 15 minutes.
  5. Stir in the parsley and serve.
