Ingredients

  • 4 large bell peppers, any color
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 can diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon cayenne pepper

Directions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Add the onion and garlic to the skillet and cook until softened.
  5. Stir in the cooked rice, diced tomatoes, salt, pepper, paprika, oregano, basil, and cayenne pepper. Cook for a few more minutes until heated through.
  6. Stuff the bell peppers with the meat mixture and place them in a baking dish. Top with shredded cheddar cheese.
  7. Cover the baking dish with foil and bake for 25-30 minutes, until the peppers are tender.
  8. Remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
