Ingredients

  • 1 lb ground beef
  • 1 packet of taco seasoning
  • 1/2 onion, diced
  • 1/2 bell pepper, diced
  • 1 can of chili
  • 1 can of enchilada sauce
  • 1/2 cup of shredded cheddar cheese
  • 1/2 cup of shredded Monterey Jack cheese
  • 10-12 corn tortillas

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large skillet, cook the ground beef over medium heat, stirring occasionally, until it is fully cooked.
  3. Add the taco seasoning, onion, and bell pepper to the skillet, and cook for an additional 5 minutes, stirring occasionally.
  4. Add the chili and enchilada sauce to the skillet and stir to combine.
  5. In a 9x13 inch baking dish, spread 1/4 cup of the cheese mixture over the bottom of the dish.
  6. Fill each tortilla with 1-2 tablespoons of the beef mixture. Roll up the tortillas and place them in the baking dish, seam side down.
  7. Pour the remaining enchilada sauce over the top of the tortillas and sprinkle with the remaining cheese.
  8. Bake the enchiladas for 25-30 minutes, or until the cheese is melted and bubbly.
