Ingredients

  • 1 butternut squash, peeled, seeded, and thinly sliced
  • 2 cups heavy cream
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 cup grated Parmesan cheese
  • 1 cup grated Gruyere cheese
  • 1 cup breadcrumbs
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large saucepan, heat the heavy cream over medium heat. Add the minced garlic, dried thyme, dried sage, salt, and pepper. Stir well and let it simmer for 5 minutes.
  3. Arrange a layer of butternut squash slices in a greased baking dish. Pour a small amount of the creamy sauce over the squash. Sprinkle some grated Parmesan and Gruyere cheese over the sauce. Repeat the layers until all the squash and sauce are used, finishing with a layer of cheese on top.
  4. In a small bowl, combine the breadcrumbs, melted butter, and a pinch of salt and pepper. Sprinkle the breadcrumb mixture evenly over the top layer of cheese.
  5. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for another 10-15 minutes or until the top is golden and bubbling.
  6. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh thyme leaves, if desired.
