Ingredients

  • 4 large russet potatoes
  • 2 tablespoons vegetable oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup sliced green onions
  • Salt and pepper, to taste
  • Sour cream, for serving

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
  3. Rub the potatoes with vegetable oil, ensuring they are evenly coated. Sprinkle salt and pepper all over the potatoes.
  4. Place the potatoes directly on the oven rack and bake for 40 minutes or until they are tender.
  5. Remove the potatoes from the oven and let them cool for a few minutes.
  6. Cut each potato in half lengthwise. Using a spoon, carefully scoop out the flesh, leaving about 1/4 inch of potato on the skins.
  7. Brush the inside and outside of the potato skins with vegetable oil. Place them skin-side down on a baking sheet.
  8. Return the potato skins to the oven and broil for 5 minutes or until they turn crispy and golden brown.
  9. Remove the potato skins from the oven. Sprinkle shredded cheddar cheese, bacon bits, and sliced green onions evenly over each skin.
  10. Place the potato skins back in the oven and broil for an additional 2-3 minutes, or until the cheese melts and starts to bubble.
  11. Remove from the oven and let them cool for a minute.
  12. Serve the loaded baked potato skins hot with sour cream on the side for dipping.
