- 1/4 cup sliced green onions
- Salt and pepper, to taste
- Sour cream, for serving
Directions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
- Rub the potatoes with vegetable oil, ensuring they are evenly coated. Sprinkle salt and pepper all over the potatoes.
- Place the potatoes directly on the oven rack and bake for 40 minutes or until they are tender.
- Remove the potatoes from the oven and let them cool for a few minutes.
- Cut each potato in half lengthwise. Using a spoon, carefully scoop out the flesh, leaving about 1/4 inch of potato on the skins.
- Brush the inside and outside of the potato skins with vegetable oil. Place them skin-side down on a baking sheet.
- Return the potato skins to the oven and broil for 5 minutes or until they turn crispy and golden brown.
- Remove the potato skins from the oven. Sprinkle shredded cheddar cheese, bacon bits, and sliced green onions evenly over each skin.
- Place the potato skins back in the oven and broil for an additional 2-3 minutes, or until the cheese melts and starts to bubble.
- Remove from the oven and let them cool for a minute.
