This Cheesy Chicken Enchilada Pasta combines the best of both worlds - creamy pasta and spicy enchiladas. Tender chicken, gooey cheese, and zesty enchilada sauce come together to create a satisfying meal that the whole family will love.

Ingredients

  • 8 oz penne pasta
  • 1 lb chicken breast, diced
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup diced green chilies
  • 1/4 cup chopped cilantro
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Directions

  1. Cook pasta according to package instructions, drain and set aside.
  2. In a large skillet, cook chicken until no longer pink. Add cumin, chili powder, salt, and pepper.
  3. Stir in enchilada sauce, sour cream, green chilies, and half of the cheddar cheese. Mix until well combined.
  4. Add cooked pasta to the skillet and toss to coat evenly. Cook for another 2-3 minutes.
  5. Top with remaining cheddar cheese and chopped cilantro. Serve hot.
