Ingredients
- 2 cups grated carrots
- 1 cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking powder
- ⅓ cup vegetable oil
- 3 eggs
- 2 cups cooked broccoli, chopped

Directions
- Preheat oven to 350°F.
- In a medium bowl, mix together the grated carrots, flour, salt and baking powder.
- Add the vegetable oil and eggs and mix until combined.
- Press the mixture into a 9-inch pie plate.
- In a separate bowl, mix together the cooked broccoli, cheese and milk.
- Pour the broccoli mixture into the pie plate.
- Bake for 40-50 minutes, or until the quiche is set and the crust is golden brown.
- Let cool before serving.
