Ingredients

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 36 round potsticker wrappers
  • 1/4 cup water
  • 2 tablespoons vegetable oil, for frying

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves on a baking sheet, cut side up, and drizzle with olive oil. Roast in the oven for 40 minutes or until the squash is soft.
  3. While the squash roasts, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and grated ginger and cook for an additional 1-2 minutes.
  4. Once the squash is cooked, remove it from the oven and let it cool for a few minutes. Scoop out the flesh and transfer it to a mixing bowl. Mash the squash with a fork until smooth.
  5. To the mashed squash, add the cooked onion, garlic, and ginger mixture. Stir in soy sauce, rice vinegar, sesame oil, brown sugar, salt, and black pepper. Mix well to combine.
  6. Place a potsticker wrapper on a clean, dry surface. Spoon about 1 tablespoon of the butternut squash filling onto the center of the wrapper. Dip your finger in water and run it along the edge of the wrapper to moisten. Fold the wrapper in half to form a half-moon shape, then pinch the edges to seal. Repeat with the remaining wrappers and filling.
  7. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the potstickers to the skillet, flat side down, and cook for 2-3 minutes or until the bottoms are golden brown. Add the water to the skillet, then cover and steam the potstickers for 5 minutes or until the wrappers are tender and the filling is fully cooked.
  8. Remove the potstickers from the skillet and serve hot. Enjoy with soy sauce or your favorite dipping sauce.
