In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat the butter and sugars together on medium speed until light and fluffy, about 3 minutes.
Add the eggs, one at a time, until combined. Scrape down the sides and bottom of the bowl as needed. Add the vanilla and beat until combined.
In a medium bowl, whisk together the flour, baking soda, and salt. With the mixer on low speed, add the flour mixture to the wet ingredients until combined.
Using a cookie scoop or spoon, drop the cookie dough onto the prepared baking sheets. Bake for 8-10 minutes, or until the edges are lightly golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
