Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 1 zucchini, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 yellow bell pepper, seeded and chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 pound potatoes, peeled and cubed
    • Directions

      1. Preheat oven to 350 degrees F (175 degrees C).
      2. Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, carrots, zucchini, bell peppers, diced tomatoes, tomato paste, oregano, and basil. Season with salt and pepper. Cook and stir for about 5 minutes, or until vegetables are softened.
      3. Transfer the vegetable mixture to an 11x7-inch baking dish. Top with the cubed potatoes and stir to combine.
      4. Cover the baking dish with aluminum foil and bake in preheated oven for 25 minutes. Remove foil and continue baking for an additional 10 minutes, or until potatoes are tender.
