Ingredients

  • 1 pound bok choy
  • 8 ounces shiitake mushrooms
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/4 cup vegetable broth
  • 1 teaspoon cornstarch
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Directions

  1. Rinse the bok choy thoroughly and separate the leaves. Slice the stems into 1-inch pieces and roughly chop the leaves.
  2. Remove the stems from the shiitake mushrooms and slice them. Keep the caps intact.
  3. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, vegetable broth, cornstarch, and red pepper flakes (if using). Set aside.
  4. Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.
  5. Add the bok choy stems to the skillet and cook for 2-3 minutes until slightly softened.
  6. Add the shiitake mushroom caps and bok choy leaves to the skillet. Stir fry for 3-4 minutes until the mushrooms are tender and the bok choy leaves have wilted.
  7. Pour the sauce mixture over the vegetables in the skillet. Stir well to coat all the ingredients.
  8. Cook for an additional 2 minutes, stirring constantly, until the sauce has thickened and coats the vegetables.
  9. Season with salt and pepper to taste.
