Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup cold unsalted butter, cut into small pieces

  • 1 1/2 cups fresh raspberries
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk

Directions

  1. In a food processor, combine the flour, granulated sugar, and salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
  2. Add the ice water gradually and pulse until the dough comes together.
  3. Divide the dough into two equal portions and shape each into a flat disc. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  5. Roll out one disc of dough on a lightly floured surface to a thickness of about 1/4 inch.
  6. Using a heart-shaped cookie cutter, cut out heart shapes from the rolled out dough and transfer them to the prepared baking sheet.
  7. Repeat with the second disc of dough.
  8. Use a smaller heart-shaped cookie cutter to cut out the centers of half of the heart shapes on the baking sheet.
  9. Bake the hearts in the preheated oven for 12-15 minutes, or until they are lightly golden around the edges. Let them cool completely on a wire rack.
  10. In a small bowl, mash the raspberries with a fork until they become juicy.
  11. Stir in the powdered sugar and vanilla extract until well combined.
  12. Spread a teaspoon of the raspberry mixture on the whole heart-shaped cookies.
  13. Place the heart cookies with the centers cut out on top of the raspberry filling.
  14. Drizzle the tops of the hearts with milk and sprinkle with powdered sugar.
  15. Allow them to set for a few minutes before serving.
