Ingredients

  • 2 and 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 and 1/2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 2 cups fresh blueberries
  • 1 tablespoon all-purpose flour
  • 3 tablespoons lemon juice
  • 1 cup powdered sugar

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan.
  2. In a medium bowl, whisk together 2 and 1/2 cups of all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, alternating with the sour cream. Begin and end with the flour mixture, mixing until just combined.
  6. In a separate bowl, toss the fresh blueberries with 1 tablespoon of flour. This will help prevent the blueberries from sinking to the bottom of the cake.
  7. Gently fold the coated blueberries into the cake batter.
  8. Pour the batter into the prepared bundt pan, spreading it evenly.
  9. Bake for 50-55 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. While the cake is baking, prepare the lemon glaze. In a small bowl, whisk together the lemon juice and powdered sugar until smooth.
  11. Once the cake is baked, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
  12. Once the cake has cooled, drizzle the lemon glaze over the top.
  13. Slice and serve the delicious Blueberry Sour Cream Bundt Cake!
