Ingredients
1 pound bacon, cooked and crumbled
1 cup mayonnaise
1/4 cup sour cream
1/4 cup finely diced red onion
2 tablespoons chopped fresh parsley
1 teaspoon lemon juice
Salt and pepper, to taste
24 wonton wrappers
1 head of lettuce, shredded
2 tomatoes, diced
Directions
Preheat the oven to 350 degrees F.
In a medium bowl, combine the crumbled bacon, mayonnaise, sour cream, red onion, parsley, lemon juice, salt, and pepper. Mix until well combined.
Spray a mini muffin tin with nonstick cooking spray.
Place a wonton wrapper into each muffin cup and gently press down to form the cups.
Bake for 8-10 minutes or until the edges of the cups are golden brown.
Remove from the oven and let cool for a few minutes.
Fill each cup with the bacon mixture and top with shredded lettuce and diced tomatoes.
Serve immediately.
