- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1 teaspoon smoked paprika

- 1 teaspoon ground coriander
- ¼ teaspoon cayenne pepper (optional)
- 1 pound beef stew meat, cubed
- 2 cups beef broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can coconut milk
- Salt and black pepper to taste
- Chopped fresh cilantro, for garnish (optional)
Directions
- Heat the olive oil in a large stockpot or Dutch oven over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Stir in the curry powder, ginger, turmeric, smoked paprika, cumin, coriander, and cayenne pepper. Cook for 1 minute, stirring constantly.
- Add the beef cubes and cook until browned, about 5 minutes.
- Pour in the beef broth, diced tomatoes, and coconut milk. Bring the mixture to a boil, then reduce the heat to low and simmer, uncovered, for 30 minutes, stirring occasionally.
- Season with salt and black pepper to taste.
- Garnish with fresh cilantro, if desired, and serve.
