Ingredients
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 3/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
Directions
- In a clean, dry bowl, beat the egg whites and cream of tartar on high speed until soft peaks form.
- Slowly add the sugar, one tablespoon at a time, beating until stiff peaks form.
- Add the vanilla extract and almond extract (if using) and beat until combined.
- Using a rubber spatula, fold the meringue mixture until it is smooth and glossy.
- Drop the meringue by spoonfuls onto a parchment-lined baking sheet, making sure to leave an inch or two between each spoonful.
- Bake in a preheated oven at 250 degrees F for 45 minutes to 1 hour, or until lightly golden brown.
- Allow the meringues to cool completely before serving.
