1/2 pound smoked sausage, sliced into 1/4-inch coins
1 cup diced onion
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 large sweet potato, peeled and cut into 1/2-inch cubes
1 (14.5-ounce) can diced tomatoes with juice
1 (15-ounce) can black beans, drained and rinsed
4 cups chicken broth
Directions
In a large pot, heat the olive oil over medium-high heat. Add the sausage coins and cook for 4-5 minutes, stirring frequently, until lightly browned.
Add the onion, garlic, smoked paprika, oregano, cumin, salt, and black pepper. Cook for 1-2 minutes until the vegetables are softened.
Add the sweet potato cubes, diced tomatoes with juice, black beans, and chicken broth. Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the sweet potatoes are tender.
Serve with your favorite toppings, such as sour cream, shredded cheese, or avocado.
