In a large saucepan, combine the diced tomatoes, onion, garlic, apple cider vinegar and sugar. Bring to a boil over medium-high heat and reduce heat to low.
Add the coriander, cumin, red chilli powder, ground ginger, turmeric and salt. Simmer, stirring occasionally, for 15 minutes.
Remove from the heat and let cool. Store in an airtight container in the refrigerator for up to 2 weeks.
