  • 1 1/3 cups sweetened shredded coconut
  • 1 cup chopped pecans

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix together until well combined.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix on medium speed for 2 minutes.
  4. Stir in the boiling water, mixing until the batter is smooth. Be careful as the batter will be thin.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
