Ingredients

  • 1/4 cup olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1/2 cup vodka
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large saucepan over medium-high heat.
  2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Add the crushed tomatoes, vodka and cream and bring to a simmer.
  4. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
  5. Stir in the Parmesan cheese, salt and pepper and simmer for an additional 5 minutes.
  6. Serve over cooked pasta.
