Ingredients

  • 3 medium-sized potatoes
  • 1 onion, thinly sliced
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 sprig curry leaves
  • Fresh coriander leaves for garnishing

Directions

  1. Wash and peel the potatoes. Cut them into small cubes.
  2. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  3. Add curry leaves, slit green chilies, and ginger-garlic paste. Saute for a minute.
  4. Add sliced onions and saute until they turn translucent.
  5. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  6. Add the cubed potatoes and stir fry for 5-7 minutes until they are cooked and crispy.
  7. Garnish with fresh coriander leaves and serve hot.
