Ingredients
- 3 medium-sized potatoes

- 1/2 teaspoon garam masala

Directions
- Wash and peel the potatoes. Cut them into small cubes.
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
- Add curry leaves, slit green chilies, and ginger-garlic paste. Saute for a minute.
- Add sliced onions and saute until they turn translucent.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
- Add the cubed potatoes and stir fry for 5-7 minutes until they are cooked and crispy.
- Garnish with fresh coriander leaves and serve hot.
