Ingredients

  • 2 lbs chicken breasts, boneless and skinless
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 chipotle peppers in adobo sauce, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste
  • Tortillas, for serving
  • Optional Toppings: avocado, cilantro, lime wedges

Directions

  1. In a large skillet or Dutch oven, heat the vegetable oil over medium heat.
  2. Add the sliced onions and cook until softened and lightly browned, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Add the minced chipotle peppers, dried oregano, ground cumin, and smoked paprika to the skillet. Stir well to combine.
  5. Add the diced tomatoes with their juices to the skillet. Season with salt and pepper, to taste. Bring the mixture to a simmer.
  6. Add the chicken breasts to the skillet, ensuring they are fully submerged in the sauce. Reduce the heat to low, cover with a lid, and let simmer for 30 minutes or until the chicken is cooked through and tender.
  7. Remove the chicken breasts from the skillet and shred them using two forks.
  8. Return the shredded chicken to the skillet and stir well to coat it in the sauce. Let it simmer for an additional 10-15 minutes to allow the flavors to meld together.
  9. Taste and adjust seasonings, if necessary.
  10. Serve the spicy shredded chicken tinga in warm tortillas with your favorite toppings such as avocado, cilantro, and lime wedges.
