- 2 squirrels, cleaned and cut into pieces
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced

- 2 celery stalks, chopped
- 2 sprigs thyme
- 2 bay leaves
- 2 cups Belgian beer
- 2 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons flour
- 2 tablespoons water
