  • 2 pounds beef tenderloin

  • 1 cup boiling water
  • 2 tablespoons olive oil

  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, pour the boiling water over the dried porcini mushrooms and let them soak for 10-15 minutes, until softened. Drain and reserve the soaking liquid.
  3. In a large skillet, heat the olive oil over medium-high heat. Season the beef tenderloin with salt and pepper, then sear it for 2-3 minutes on each side until browned. Remove the beef from the skillet and transfer it to a baking dish.
  4. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the soaked porcini mushrooms and cook for another 2 minutes.
  5. Pour the reserved porcini soaking liquid into the skillet and cook until it reduces by half, about 5-7 minutes.
