Ingredients

  • 2 pounds beef (cut into cubes)
  • 4 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup red wine
  • 1/4 cup tomato paste
  • 2 cups beef broth
  • 2 tablespoons olive oil

Directions

  1. In a large bowl, combine the minced garlic, chopped onion, paprika, dried oregano, dried thyme, salt, and black pepper. Mix well.
  2. Add the beef cubes to the bowl and toss to coat them evenly with the marinade. Let the beef marinate for at least 30 minutes.
  3. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the marinated beef cubes and cook until browned on all sides.
  4. Remove the beef from the pot and set aside.
  5. In the same pot, add the sliced bell peppers and cook until they start to soften.
  6. Add the browned beef back to the pot and stir in the red wine, tomato paste, and beef broth.
  7. Bring the mixture to a boil, then reduce heat to low, cover the pot, and simmer for 1 hour or until the beef is tender.
