Ingredients
- 1 whole chicken, about 4-5 lbs
- 2 oranges, juiced and zested
- 1 lemon, juiced and zested
- 1 lime, juiced and zested
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
Directions
- In a bowl, whisk together the orange, lemon, and lime juice and zest, olive oil, garlic, smoked paprika, salt, and pepper to make the marinade.
- Place the whole chicken in a resealable plastic bag or a large bowl and pour the marinade over it, making sure to coat the chicken well. Marinate in the fridge for at least 4 hours or overnight.
- When ready to cook, preheat your smoker to 250°F. Remove the chicken from the marinade and discard the marinade.
- Place the chicken on the smoker rack and smoke for about 3-4 hours, or until the internal temperature reaches 165°F.
