Ingredients

  • 1 whole chicken, about 4-5 lbs
  • 2 oranges, juiced and zested
  • 1 lemon, juiced and zested
  • 1 lime, juiced and zested
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. In a bowl, whisk together the orange, lemon, and lime juice and zest, olive oil, garlic, smoked paprika, salt, and pepper to make the marinade.
  2. Place the whole chicken in a resealable plastic bag or a large bowl and pour the marinade over it, making sure to coat the chicken well. Marinate in the fridge for at least 4 hours or overnight.
  3. When ready to cook, preheat your smoker to 250°F. Remove the chicken from the marinade and discard the marinade.
  4. Place the chicken on the smoker rack and smoke for about 3-4 hours, or until the internal temperature reaches 165°F.
