Ingredients

  • 1 whole pumpkin
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • Optional: garlic powder, chili powder, or other spices

Directions

  1. Preheat the oven to 375°F.
  2. Wash the pumpkin and cut off the stem.
  3. Place the pumpkin on a cutting board and cut it in half using a large knife.
  4. Scoop out the seeds and stringy parts from the pumpkin halves.
  5. Place the pumpkin halves cut-side-up on a baking sheet.
  6. Drizzle the olive oil over the pumpkin halves and season with salt and pepper.
  7. Optional: add garlic powder, chili powder, or other spices, to taste.
  8. Bake for 25-30 minutes, or until the pumpkin is tender and lightly browned.
  9. Serve warm or at room temperature.
