Ingredients
- 1 French baguette
- 1/4 cup mayonnaise
- 1/4 cup hoisin sauce
- 1 red bell pepper, thinly sliced
- 1/2 cup grated carrots
- 1/2 cup sliced cucumber
- 1/4 cup minced cilantro
- 1/4 cup chopped roasted peanuts
Directions
- Preheat oven to 350°F (175°C). Slice the baguette into 4 equal pieces.
- Mix the mayonnaise and hoisin sauce together in a bowl.
- Spread the mayonnaise mixture on both sides of the baguette slices.
- Top the baguette slices with the bell pepper, carrots, cucumber, cilantro, and peanuts.
- Bake in preheated oven for 10 minutes, or until the vegetables are lightly browned.
- Serve warm.
