Ingredients

  • 1 French baguette
  • 1/4 cup mayonnaise
  • 1/4 cup hoisin sauce
  • 1 red bell pepper, thinly sliced
  • 1/2 cup grated carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup minced cilantro
  • 1/4 cup chopped roasted peanuts

Directions

  1. Preheat oven to 350°F (175°C). Slice the baguette into 4 equal pieces.
  2. Mix the mayonnaise and hoisin sauce together in a bowl.
  3. Spread the mayonnaise mixture on both sides of the baguette slices.
  4. Top the baguette slices with the bell pepper, carrots, cucumber, cilantro, and peanuts.
  5. Bake in preheated oven for 10 minutes, or until the vegetables are lightly browned.
  6. Serve warm.
