Ingredients

  • 1.5 lb. chicken thighs, skinless and boneless
  • 1.5 lb. Brussels sprouts, trimmed and halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 400F (200C).
  2. Place the chicken thighs in a single layer in a large baking dish.
  3. Add the Brussels sprouts, garlic, olive oil, oregano, basil, and salt and pepper. Toss everything together, making sure the chicken and Brussels sprouts are evenly coated with the oil and herbs.
  4. Bake for 25-30 minutes, until the chicken is cooked through and the Brussels sprouts are lightly browned.
  5. Serve and enjoy!
