  • 4 large poblano peppers
  • 1 pound ground beef

  • 1 cup shredded Mexican cheese blend
  • 1 cup enchilada sauce

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Place the poblano peppers on a baking sheet and roast them in the oven for about 15 minutes, or until the skins are blistered and charred. Remove from the oven and let cool.
  3. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion, minced garlic, ground cumin, chili powder, salt, and black pepper. Cook until the onion is softened and the spices are fragrant.
